This is a very simple, versatile and healthy dish to make. The use of different types of vegetables and herbs renders this dish absolutely flavourful. I love playing around with different vegetable combinations and herbs just to keep things interesting.
Red and Yellow Bell-Peppers [Deseeded and Sliced]
Pumpkin / Butternut Squash
Herbes de Provence
Salt and Pepper
Preheat the oven to 200°C
In a bowl mix all ingredients together
Scatter the ingredients on a lightly oiled baking dish and drizzle generously some more olive oil.
Bake for 35-35minutes or until the vegetables are just soft and tinged brown. What you are looking for is tenderness and caramelized edges.
Serve either hot or cold.
You can also opt to drizzle some balsamic vinegar over the top for more boost of flavour.
Do not overcrowd the baking dish! When they’re too close together, it makes it difficult for air to circulate around, steam gets trapped and all you will end up with is a soggy mess.Bon Appetit. x
