I am terrible at measuring spaghetti. I always end up with either more or very less. Estimation is not my forte! To my rescue, with this creative way of using left-over cooked spaghetti or pasta I don’t have to worry anymore. If anything, I intentionally cook more spaghetti as a lazy day back-up plan. It is easy peasy to prepare and very filling making it perfect for brunch, lunch or dinner.
LEFTOVER SPAGHETTI FRITTATA
1/2 Cup chopped red pepper
1/2 Cup chopped yellow pepper
1/2 Cup smoked ham, cut into small pieces
Onion and garlic
1/2 Teaspoon tarragon
1/2 Teaspoon oregano
Salt and Pepper
1 Cup spaghetti, cut into small pieces [optional]
1/4 Cup grated parmesan cheese
1/4 Cup shredded mozzarella cheese
Finely chopped red Chillies
Preheat oven to 350°F
Heat olive oil in a large sauté pan over medium-high heat. Add in onion, garlic, tarragon, oregano and red chillies. Cook until onion and garlic are tender.
Stir in red and yellow bell pepper. Cook for about five minutes until slightly tender.
Add smoked ham, parmesan cheese and spaghetti. Stir until evenly distributed.
Transfer the mixture into a baking pan. Spread it evenly at the bottom. Let it cool for about 10minutes.
Pour whisked eggs over the mixture and sprinkle the mozzarella cheese on top
Bake for about 30 min or until center is set.
