Meet my favorite salad. I could eat this every day for the rest of my life. I love its simplicity and how you can prepare all the ingredients and store in the fridge for a couple of days. I always have baked eggplant and red bell pepper in the fridge and whenever I feel like having salad, I simply toss them in my lettuce, drizzle some olive oil and voila. It is healthy, delicious, colorful and brings together different flavors and textures.
The other day I prepared garlic parsley croutons using left over bread. It was a win because my boys loved it. They kept on snacking on them, I literally had to hide away a few pieces which I tossed in here for some crunchiness.
