BAKED MEDITERRANEAN VEGETABLES SALAD.

wp-1534290541147..jpgMeet my favorite salad. I could eat this every day for the rest of my life. I love its simplicity and how you can prepare all the ingredients and store in the fridge for a couple of days. I always have baked eggplant and red bell pepper in the fridge and whenever I feel like having salad, I simply toss them in my lettuce, drizzle some olive oil and voila. It is healthy, delicious, colorful and brings together different flavors and textures. Read more

SPAGHETTI FRITTATA.

PSX_20180312_150002I am terrible at measuring spaghetti. I always end up with either more or very less. Estimation is not my forte! To my rescue, with this creative way of using left-over cooked spaghetti or pasta I don’t have to worry anymore. If anything, I intentionally cook more spaghetti as a lazy day back-up plan.
