I love its simplicity and how you can prepare all the ingredients and store in the fridge for a couple of days. I always have baked eggplant and red bell pepper in the fridge and whenever I feel like having salad, I simply toss them in my lettuce, drizzle some olive oil and voila. SPAGHETTI FRITTATA.

To my rescue, with this creative way of using left-over cooked spaghetti or pasta I don’t have to worry anymore. If anything, I intentionally cook more spaghetti as a lazy day back-up plan.
