unnamed-8I love salmon because of its amazing health benefits. It is packed with omega-3 fatty acids, selenium, vitamin B12, A and D which are all good elements for our immunity systems. It is also a super versatile fish, you can prepare it in so many ways and pair it with a variety of dishes. This is one of my family’s favourite weeknight dinner. 


2 tablespoons extra-virgin coconut oil
1 small onion, diced
2 cloves garlic, minced
1/2 teaspoon ground coriander
2 tablespoons tomato puree
Pink himalayan salt
Black pepper
1 cup coconut cream
Wild-salmon steaks

Preheat a large heavy skillet over medium heat for about 3 minutes.
Coat salmon with olive oil. Place in skillet.
Cook for about 2 minutes on either side until browned.
Set the salmon aside.
Heat oil in a medium saucepan over medium.
Add onion, garlic, coriander, a pinch of salt and black pepper
Keep stirring until softened.
Add tomato puree and cook for about a minute.
Add the skillet seared salmon.
Add coconut cream and simmer for about 10minutes.
